Dirty Rice

Bojangles Copycat Recipe

1/2 cup oil
1/4 cup flour
1 cup minced onions
1 1/2 pounds finely chopped chicken livers
1/3 cup celery, minced
1/2 cup parsley, minced
1/2 cup green pepper, diced
1 clove garlic, minced
2 teaspoons salt
1 teaspoon pepper
1/8 teaspoon cayenne pepper
4 1/2 cups chicken stock
2 cups long grained rice

Preheat oven to 350 degrees. Bring the stock to a boil and add rice. Reduce heat and simmer until rice is tender, about 20 minutes. Heat the oil in a large pan and add the flour. Saute onions, chicken livers, celery, parsley, and garlic together for several minutes. Add seasonings and saute again for about 2 to 3 minutes. Stir the cooked rice into the pot and bake for 20 minutes.
