Cajun Fried Chicken

Bojangles Copycat Recipe

Makes 6 servings

1 (3 pound) whole chicken, cut into pieces
1 cup all purpose flour
salt to taste (cajun seasoning contains lots of salt so go easy)
ground black pepper to taste
1 tablespoon paprika
1 tablespoon cajun seasoning
1 tablespoon cayenne pepper
1 quart vegetable oil for frying

Season chicken pieces with 1/2 of salt, pepper, cajun seasoning and paprika. Rub well. Add the other 1/2 of mix to flour roll chicken in flour. Add 1/2 to 3/4 inch oil to a large, heavy skillet. Heat to 365 degrees. Place chicken pieces in hot oil. Cover, and fry until golden, turning once, 15 to 20 minutes. Drain on wire rack.
