Bojangles Copycat Recipe

1/3 cup lemon juice
1 1/2 tablespoons Cajun seasoning
3 cloves garlic, minced
2 tablespoons Tabasco sauce
2 tablespoons Worcestershire sauce
1 tablespoons vinegar
4 boneless chicken breasts halves, cut into bite sized cubes
1 cup Seasoned flour (see below)
3 eggs, lightly beaten

Combine lemon juice,seasoning, garlic,vinegar, Tabasco and Worcestershire sauce in small bowl. Stir in chicken cubes; cover and chill for 6 to 8 hours or overnight. Lift chicken from marinade; roll in egg, then in flour mixture to coat evenly. Place on a nonstick baking sheet. Bake chicken nuggets at 400 degrees for 10 to 12 minutes.

Cajun Seasoned Flour
2 cups flour
2 tablespoons salt
1 tablespoon celery salt
2 tablespoons black pepper
2 tablespoons dry mustard
4 tablespoons paprika
2 tablespoons garlic powder
2 tablespoon onion powder
1 tablespoon cayenne pepper
1/2 teaspoon thyme

Stir together to blend evenly. Store in a tightly covered jar. For a crumb coating on fish, meat or poultry, combine 1 1/2 tablespoons of seasoned flour with 1 cup of dry bread crumbs.
