Tomato, Cucumber, Onion Salad

Kenny Rogers Roaster Copycat Recipe

Makes 6 servings

3 medium to large tomatoes
1 hot house cucumber, halved and thinly sliced
1 medium green bell pepper, thinly sliced
1/2 medium mild onion, halved, cut into thin slices and separated
2 tablespoons minced fresh parsley
1/2 cup chopped green onions
1 tablespoon red OR white wine vinegar
2 tablespoons fresh lemon juice
2 tablespoons olive oil
seasoned salt and seasoned pepper to taste

Cut tomatoes in half; squeeze out as many seeds as possible. Cut each half into 4 to 5 wedges and then each wedge in half or thirds.

Combine in a large mixing bowl along with remaining ingredients; mix. Refrigerate 1 to 2 hours prior to serving.
