DILL PASTA SALAD
Kenny Rogers Roasters Copycat Recipe
Makes 8 servings
Salad:
12 oz uncooked fancy pasta
3 cups sliced cucumber
3 cups broccoli
2 cups tomatoes (or halved cherry tomatoes)
1 cup chopped onion
Dressing:
1 cup light sour cream
1 cup light mayonnaise
1/2 cup skim milk
3 teaspoons dried dill weed
1 teaspoon ground pepper
1 teaspoon salt
1/2 teaspoon season salt
2 tablespoons vinegar
Cook pasta according to package directions; drain and rinse with cold water. In large bowl, combine pasta with remaining salad ingredients. In bowl, stir together dressing ingredients. Pour dressing over salad; toss to coat. Cover and refrigerate at least 1 hour.
